One of the most complicated cakes to make in vegan baking-world is cheesecake! Many recipes end up looking like Jello or Pudding, and some ingredients are just too expensive to consider!
Over the weekend, I tried a new method which called for Cashew Cream (blended cashew nuts), Chickpeas, Agave/Maple and many other rich, wholesome ingredients. The cake turned out divine (see picture above!), even if it did have a slightly nutty flavour.
I decided to top this cake off with Lotus Biscoff (Caramel Biscuit Spread, which yes, incidentally is vegan-friendly) and fresh strawberries.
Our cheesecakes will now be added to the cake list. If you're willing to experiment, I am absolutely dying to make someone a marble cheesecake or caramel swirl cheesecake using this recipe!
Brownies have always been a crowd pleaser. They can be made plain, chunky, gooey or cakey. Everyone has a preference when it comes to these chocolatey squares! If you’re new to Gluten-Free and/or Vegan Baking, Brownies are the easiest desserts to start with.
Most Brownie recipes call for a 1 bowl mix method. Once you’re done mixing the batter, pour into a tray and bake for 30 mins at 175 degrees. Half an hour later, you’ve got delectable treats to enjoy on your own or with friends.
This weekend I made brownies for a new customer. These were Gluten-Free and Vegan, meaning it is 100% plant-based and wheat free. Happy 2018! It’s been a while since we last posted on this website! I think 2018 has the potential to be a fantastic year. I recently read a report through Livekindly.com which stated that demand for vegan food is growing and is going to be the next big food trend...and why not? Everything we have grown up eating and craving can be easily veganized at an affordable cost. Even the most complex celebration cakes can be made with vegan approved ingredients.
Before the Christmas break, I made a customized Barbie Doll Cake for a birthday party. It was the most challenging yet satisfying cake to make! I loved piping those ruffles and creating something completely girly and unique.
A cake becomes memorable because of the concept, design and colours used. Decorative Buttercream Flowers are a unique and simple way to dress up your next cake. It is definitely becoming one of my preferred techniques to amp up the WOW factor for my cakes.

This morning, I worked on a batch of floral cupcakes made with a Vanilla Funfetti cake base. I'm 100% in love with this piping technique! Wouldn't it be a delightful gift to give someone special?
Cupcakes can be a hit or a miss. In my opinion, these little guys make an ideal gift, rather than an indulgent treat (unless you really love cupcakes!). At The Fugitive Baker, we have modified the American Buttercream recipe to (a) make it vegan and halal friendly (b) less sweet. Although Singaporeans do love food, many of us appreciate a lighter version of frosting that won't cause dental problems!
